According to a dictionary, both "the final" and "the finals" are OK. I wonder if they are used interchangeably. The final game is only one unlike semi-finals and quarter-finals. In spite of that, why is it "finals"?

In soccer saying finals would not make sense. You could say "the finals" if you were talking about something like the final round of a judo tournament, where there are multiple final matches, one for each weight class.
