Hmm... Why don't they say;
"Don't hit his head."
"When I touched his shoulder, ---"
And, as I've written on this blog, I've always thought there are too many "my", "your", "his", and "her" in English. In spite of it, why don't they say;
"Don't hit him on his head."
"When I touched him on his shoulder, ---"

Its interchangeable. You can use either "the" or "his" in the context of your sentences.
However, there are still reasons why someone may decide to use "the" instead of "his".
Sentence: "Don't hit him on his head."
The third word is "him", so we already know the gender of the receiver. Using "his" in the same sentence is affirming the gender twice, which may seem redundant. So thats one reason why "the" may be used rather than "his".
